breakfast scramble
what: breakfast tofu scramble

this is a very filling breakfast that you can add in various veggies and alter to whatever you like. first i squeezed some of the water out of the tofu, then crumble into the pan, add in chopped onion, mushroom, garlic, and morning star veggie sausage. i usually add salt, pepper, chili powder, fresh parsley and i topped with ground flaxseed.

stuffed green pepper filled w hummus
Hummus Recipe below
Stuffed green pepper with hummus topped with pumpkin seeds
Pepitas! Or, pumpkin seeds, are a good source of the minerals phosphorous, magnesium and manganese. They are also a good source of other minerals like zinc, tryptophan, iron and copper. Pumpkin seeds are a good source of protein and vitamin K.
my typical Hummus recipe:
1 can of garbanzo beans
2-3 T of veganaise
2 T of EVOO
1 T of tahini
juice of 1/2 a lemon
2 large cloves of garlic
2 T italian flatleaf parsley
black pepper and red pepper flakes, salt
Drain chickpeas, place in food processor. Chop garlic and parsley add to chickpeas, pulse a few times. Add the rest of the ingredients and blend until desired consistency. Sometimes I have to add more veganaise to make the hummus creamier, I usually taste and add more salt if needed.

tonite’s dinner
what: veggie pasta

tonite i made a veggie pasta from the veggies that my mother-in-law gave us from their garden. i sauteed zucchini and squash along with grape tomatoes, added minced red onion and one clove of garlic. then i added a small amt of tomato sauce and one chopped tomato (squeezed out some of the juice), chopped spinach, and a few pieces of morning star (veg) chicken starters. pepper, basil, ground flaxseed, soy parmesan, and salt. and of course Whole Wheat spaghetti, don’t eat the refined stuff, bleh!!!

dinner last nite
what: veggie soup w a slice of homemade bread
where: from Bob’s Red Mill Soup Mix, Veggie
Ingredients: Green Split Peas, Yellow Split Peas, Barley, Lentils and Vegetable Pasta (Containing Whole Wheat Flour Dehydrated Spinach, Tomato, Celery, Onion, Beets and Garlic)
this is one of my favorite soups to make, it’s very hearty and it only takes about 45 mins – 1 hour to make, just add the dried soup and simmer with water or veggie stock. i added garlic salt, onion powder, pepper and ground flaxseed. YUM!!

lunch yesterday
morning star soy chicken & veggie tortilla
this is quick and easy. i usually make this every week for lunch. for this one i added green pepper, onion, pumpkin seeds, chopped walnuts, lettuce, lemon juice and dill weed and roll up in a wheat tortilla.

tonite’s dinner
what: pasta w zucchini
where: me
tonite i made dinner for my husband and our best friend Kelly. first i sauteed one large tomato (thank you Connie) w salt and basil, i also added about 2 cloves of fresh chopped garlic, chopped onion, chopped spinach and 1 chopped zucchini. then i added 2 cans of tomato sauce w salt, chili powder, and pepper. while that cooked, i boiled rotini pasta. once the pasta was al dente i combined all into a casserole dish with soy mozzarella cheese and soy parmesean cheese. bake til ready!

dinner & goodies
last nite we had dinner at my in-laws. my mother-in-law is a wonderful cook and we always love having dinner there b/c she makes great vegan dishes for us. it’s nice to have a nite off from cooking. my SILs brought us (2 of my favorite things) French wine and Swiss chocolate from their trip to Europe.
what: Rachel Ray Fake-Baked Ziti, salad and multi-grain bread, I didn’t get a picture, but the dessert was a blueberry & peach cobbler, delicious!

tofurky sammich
my friend was reading Veg News and told me about peppered tofurky and avocado sammiches. yesterday for lunch i made them, so delicious!
