lunch burrito
yesterday for lunch, i made a veggie burrito with mixed veggies and soy chicken. it took about 5 minutes to make, i love easy lunches, so i can quickly get back to work.

Stop Using Plastic Bags!! everytime i grocery shop, i cannot stand using all those plastic bags. they are a waste and terrible for animals. i have been too lazy to find just the “right” cloth bag, but i finally found the cutest bags at Herbivore clothing:

comfort food
sometimes you just have those cravings for something warm and comforting. tonite i mixed together some veggies, soy chicken and elbow macaroni. i added braggs liquid amino, vegan cream cheese and sour cream and EVOO, YUM
with a sweet potato to make me feel healthier.

vegetable plate
what: vegetable plate
tonite, I made a very filling vegetable plate, I could only finish half my plate. i roasted asparagus and brussel sprouts with coarse sea salt, pepper, and olive oil in a 400° oven 30 mins. for the sprouts and about half that for the asparagus. i boiled the corn for a few minutes and brushed with salt, pepper, EVOO, basil & italian parsley. the red beans were sauteed with garlic and onion.

fake baked pasta
what: fake baked pasta (rachel ray’s)
last nite, i made the pasta that I had from a previous nite at my MIL’s for my husband and our friend. it was yummy. but, I overcooked the pasta a bit, since it was sitting in the pot waiting for the sauce to finish, and I would have added more basil to the tomato sauce. i also made a lemon vinaigrette spinach and sprout salad. the recipe for the pasta is linked above.

the other nite, I made a very quick veggie pasta before heading to a birthday party. i sauteed asparagus, broccoli, zucchini, button and shitake mushrooms with basil, garlic and roma tomatoes.

have you heard the recent news about Almonds? raw almonds will no longer be “truly raw” b/c of a new mandate that all almonds including organic must be pasteurized. almonds have some amazing benefits, such as, a reduced risk of heart disease, cancer prevention, great source of calcium, magnesium, vitamin E, protein, fiber and antioxidants. these benefits will be reduced if not destroyed in the pasteurization process. go here to sign the petition. love this cartoon by Mike Adams:
