tofurky sandwich & chips
what: tofurky sandwich & sweet potato baked chips
a favorite sandwich, i take slices of tofurky with slices of avocado, squeeze some lemon or lime juice over the avocado, add garlic salt and pepper and veganaise the toast, very easy & filling.
for the sweet potato chips, i slice them, spread them in a flat baking tray, dash a high heat oil, such as, safflower oil, add sea salt and fresh pepper, bake for about 15-20 mins. @ 415°.

back from Asheville
from Asheville we brought home a big bag of sweet potatoes, roma tomatoes, and squash. it’s been a busy week, so i haven’t taken many pics, but we’ve been enjoying some great food from their farmer’s market.
i made some delicious tomato-basil bruschetta, sweet potato baked fries and some great pasta dishes. last nite, i made veggies and morning star “chicken” with baked sweet potato chips:
