taco bake
Tonight’s dinner
Taco Bake
bisquick (I used the healthy version, but even healthier…use tortilla chips instead)
water
morningstar crumbles
pinto beans
onion, scallions
couple cloves of fresh garlic
salsa
sour cream
cheddar soy cheese
lettuce
taco seasoning, or make your own (chili, garlic and onion powder, salt)
Mix water and bisquick (enough to fill about 1/4″depth) add to square pan, bake at 400 til golden ~15 mins. While the crust is baking, saute crumbles and beans, add taco seasoning to both. Also, start slicing/shredding onions, garlic, lettuce and cheese (fresh tomatoes if you have them, I only had salsa). Add crumbles and beans in layers to fill the pan, place back in a 375 degree oven for a few minutes. Top with shredded cheese and garlic. If you are not eating all of the taco bake that night, then hold the toppings for individual use. Otherwise, add thin layers of sour cream, salsa, onions, lettuce, then scallions.

french bread pizza
For lunch today, my husband made french bread pizza…he wanted to make sure that I gave him credit for this one!
He sauteed mushrooms with italian seasoning and EVOO, added chopped garlic at the end. Topped the bread with sauce, mushrooms and garlic, and topped with rice mozzarella cheese. Bake in the oven on ~375-400 until crisp.

sushi appetizer
Saturday night we made a quick sushi app of Avocado, vegan cream cheese & scallions roll.

This is how I had everything set up: my bamboo mat in plastic wrap with my nori on top, sushi rice, water mixed with rice wine vinegar for my hands and knife, the sliced ingredients to the right
I place the sushi rice on the lower half of the nori, careful not to push the rice down too mushed. Then, layer the cream cheese, avocado, scallions, and flax seed. I forgot to take a pic as I was rolling the sushi!

A couple years ago, I found a lump and went thru that whole process. I went ahead and had the lump removed, which thankfully was benign. I’m definitely more aware of checking every month. There’s a lot you can do for your health and preventing cancer with healthy food. A month or so ago, I watched a great documentary, Crazy Sexy Cancer if you haven’t seen it, please watch it…it’s an incredible story of a young woman searching for treatments and alternative answers to curing her cancer. vegan potato soup
I really love making soup while we are sick with a cold and sore throat. So, tonight I made a creamy potato soup. I minced a few cloves of garlic, diced a small onion and sauteed with a few Tbs of olive oil and salt & pepper. Washed, peeled, and diced 4 potatoes, added to the pot with 2 cups of water. I let this boil over medium heat until the potatoes were almost soft (about 15 mins). Then added about 2 cups of Soy milk and a couple of Tbs of whole wheat flour (mixed separately in the measuring cup). I added more salt and pepper and simmered on medium heat until ready (about 10 mins.) Serves about 4.

cheese bread & marinara
Instead of making a whole pizza we made a quick appetizer of cheese bread and marinara loaded with garlic. I made the marinara and my husband made the cheese bread from Bisquick and italian seasonings.

new year’s eve dinner
For NYE I made a ziti casserole with fresh spinach, basil, seitan, and mushrooms. (I used rice mozzarella cheese)

christmas sushi dinner
I haven’t posted lately because we have been pretty sick, but I’ve finally uploaded my photos! For Christmas dinner(12/28) with my in-laws we made sushi.
This was my second time making sushi and I think it gets easier every time. We made several different types of veggie sushi…sauteed portabella and vegan cream cheese, avocado and cream cheese, tofu and peppers….
We also had Miso soup, spring rolls, edamame, and a veggie salad of avocado, tofu, peppers, scallions tossed with a sesame ginger dressing, YUM! The veggie salad was so delicious and a great way to eat more raw veggies, especially when you get tired of regular salads.
It was so nice to have a yummy sushi dinner after all the Christmas casseroles. I’ll definitely have to start making sushi. It is so easy and by making it yourself you don’t have to worry about possible “cross-contamination” when the sushi chefs are making your dinner.
