vegan potato soup

I really love making soup while we are sick with a cold and sore throat. So, tonight I made a creamy potato soup. I minced a few cloves of garlic, diced a small onion and sauteed with a few Tbs of olive oil and salt & pepper. Washed, peeled, and diced 4 potatoes, added to the pot with 2 cups of water. I let this boil over medium heat until the potatoes were almost soft (about 15 mins). Then added about 2 cups of Soy milk and a couple of Tbs of whole wheat flour (mixed separately in the measuring cup). I added more salt and pepper and simmered on medium heat until ready (about 10 mins.) Serves about 4.

Thanks! It was great, very soothing. You may want to add some veggie broth if it gets too thick, or if you have leftovers the next day.
