veggie stew
It’s a little early for stew, but it has been cooling down a bit and I wanted to use the fresh veggies in something a little more hearty. This was seriously delicious. I had fresh okra, green beans & tomatoes. I first thought about using them in an indian recipe, so this is a variation of Bhindi Subji.
I sautéed onion and garlic and added the sliced okra & green beans (seasoned with salt & pepper), cook for several minutes. Next, I added diced tomatoes (from about 4 tomatoes) and vegetable stock, sauté for several minutes. I added diced potatoes, cooked macaroni noodles, and seasoned with tumeric, coriander, cayenne, and basil. Cook for several minutes to let all the flavors blend together. Perfect for a rainy summer day like this one!

pasta salad

I think every color of the rainbow is in this gorgeous pasta salad from Tomato Head. This was my lunch for yesterday & today (I’ll show today’s pic later, I need to get out the door to workout soon). Gobetti pasta, artichokes, tomatoes, cabbage, sprouts, onion, carrot, broccoli, cucumber, mushrooms and mushroom sesame dressing.

summer veggies
Just a simple brown rice & veggies {asparagus, squash, shitake, carrots, broccoli, cherry tomatoes, onion, garlic, water chestnuts} stirfry. I think it’s the best way to use up the extra vegetables you have in your fridge. I feel so blessed and thankful this summer with veggies from both of our parents. I can’t wait until one day I have my own personal veggie garden.

sprouts!
I harvested some delicious alfalfa sprouts tonight. The sprouting seeds that I got from the Bread Becker’s sprouted so very well. I started them Monday evening. You can see how dense they are:
3 quart sized bags stuffed full of alfalfa. Rinsing the sprouts daily under cold water will help them keep longer. I found an Oprah article about 10 Superfoods, with sprouts being one, of course. For more information about sprouts, visit the section on sprouts, here.
