christmas dinner

I hope everyone had a wonderful Christmas.  We enjoyed spending time with family & friends.  I really wanted to make dinner for us on Christmas and it was delicious.   Most of our holiday meals end up being eating veggies and side dishes or taking a casserole to someone’s house for us to eat.  I made all from scratch:  mashed potatoes, baked sweet potatoes, broccoli casserole, stuffing, and tofurkey(bought) with mushroom gravy.

vegetable soup

I have been pretty busy this month with work and planning a big 1920’s style holiday party.  I hope to post some great pics of delicious food next week from the party!  I’m behind on my daily posts and I hope to make more time to post pics.

When I know I’m going to be very busy I love making dishes that will feed us for a few meals.  Stir-fry is great, lasagna and crockpot soups.

Last week, I made a big pot of fresh veggie tomato based soup.  We still have plenty left after a week and I even gave some to a friend.

I really love making vegetable napoleons.  They look gorgeous, but they do take quite a bit of time to prepare.  These napoleons are stacked over tomato sauce with eggplant, red pepper, tofu, red onion, vegan cream cheese, portobello and spinach.

roasted vegetables

I apologize for the lack of daily posts!  I have been super busy with the holidays and with work.  I have a photo I just finished for an exhibition this month downtown, so I am relieved that it’s finished!  Last night I made some delicious chocolate chip cookies/cakes and today a savory vegetable soup in my crockpot.

Another favorite of mine this time of year is roasted vegetables.

I cut the vegetables in same size pieces and tossed with canola oil, salt & pepper, rosemary sprigs and garlic cloves into a 375˚ oven until tender.  I used carrots, onions and new potatoes.

no bake cookies

I have been baking a lot of sweets lately, something about the holidays…I think the holidays & baking just go together!  Here is a pic of the vegan no bake cookies that I made last week.

These cookies are one of Ben’s favorites.
