lunch today

Lunch today was a half sammich of tofurkey, hummus, spinach with a side of natural popcorn, celery, veggie chips.

I have been sick this week with a cold   I’ve pretty much been eating soups.  I made a tofu noodle soup and the potato soup below.  No pretty picture, just a pic of the soup in the pot!  It was delicious!

Delicious!  Asian-style marinated tofu with crushed peanuts in lettuce wraps with a side of brown rice.

Happy New Year!

Over the holidays, I made lots of sweets and I really enjoyed the holiday baking.  One night I made some chocolate chip cookies but I pretty much improvised on the recipe.  I will have to come up with a good recipe, because I love choco chip cookies!
