wild mushroom pasta
The wild mushrooms were cooked in olive oil, minced garlic, veg parmesan cheese, and dry white wine. I tossed the mushrooms and pasta with truffle oil….very easy and delicious!

vegetable salad

A delicious healthy salad for lunch. Spinach & mixed greens, mushrooms, pepper, broccoli, onion, carrot, sprouts, radish, and rice cheese!

These are so simple to make for lunch. All the veggies & soy protein keep me full until the afternoon snack.

veggie stew
I’m trying to catch up, I’ve had a lot of pics to edit lately. Last week, it was pretty chilly outside. So, I made a veggie stew in the crockpot. We still have leftovers a week later

This was made with a bag of frozen veggies: pearl onions, celery, carrot, and potatoes. I added a can of pinto & kidney beans, a can of tomato sauce, veggie stock, morningstar crumbles for even more protein, and lots of yummy spices.

easter basket
My wonderful husband surprised me with this almost vegan Easter basket. The soap, mints, chapsti and cookies are all vegan. I love reese’s eggs, so those were a sweet surprise. I hope everyone enjoyed their Easter Sunday.

sushi nite
A couple weeks ago, we made sushi and they turned out delicious! I took quite a few pics, but I have been slow about editing them. The things that I have a difficult time with is making the sushi rice (it usually comes out gummy) and cutting the rolls. So, I hope to keep practicing and improving! Enjoy the photos!

avocado + vegan tofutti cream cheese + shredded carrot + scallion, in a soy wrap
