I (as well as my husband) have officially been a vegetarian since July 11, 2004 (yes! I actually threw out all the meat and probably several pounds of cheese and dairy in our refrigerator, and yes! I can live without dairy, it’s quite easy actually!). We decided to stop eating fast-food and processed foods, as much as possible. The healthier we tried to be and the more we read and researched, the more we were led to a vegetarian lifestyle. I never cared much for meat growing up, and thankfully in college I actually learned about vegetarian diets.

One of the many questions meat-eaters ask me is “but what do you eat?” So for my sake and others, I thought it would be best to start a food blog to journal what I eat, my recipes and my photos. I truly love cooking, I love the whole process, it’s a great stress relief for me. I try to live a vegan lifestyle the best that I can. The food on this blog will be vegan or vegetarian. Since giving up dairy, I have become lactose intolerant, it’s amazing that your body rejects what it cannot break down! I’m more impressed everyday to see different grocery stores carrying more vegan & organic products.

    Hey..!
    Just thought I’d tell you you’ve got some great-looking recipes here (and wonderful photographs). I’d like to give some of your recipes a try.
    I’ve thought about going vegetarian, or perhaps vegan, for a while, if only for a period of time to see how I fare. I love meat and food in general and I find a lot of foods very hard to resist, but I know fellow meat lovers who’ve gone vegan, so maybe I won’t fall flat on my face :D

    Thanks for your comment Amy! I think it’s incredible that you are going to try going Veg! I think you will be amazed at the changes you will experience, even the changes that you may not notice that affect our environment. To be honest, I don’t think that much about meat now, but whenever I do, there are some great vegan faux meat products out there. My husband really loved meat, but I think he would tell you that he doesn’t miss it now. If you have any questions feel free to ask me!
