middle eastern apps
The other day we had some delicious vegan apps at Mirage, a middle eastern eatery. I had toomya (a potato salad type dish), foul mudamas (fava beans, garlic and evoo) and delicious hummus.

This past weekend was my birthday, so we headed to Asheville to spend a couple days. We stopped in for coffee at World Coffee in downtown Asheville and checked out a few shops.
Then, even though we were barely hungry, we ate at the Laughing Seed Cafe, a vegetarian restaurant in downtown Asheville.
We shared the pakoras appetizer. They are filled with sweet potato and zucchini and dipped into chickpea flour and fried.
We also shared the ‘mercury not rising’ sandwich, which is a battered seitan fillet that reminds me of a “fish sandwich”. And a side of their Jalapeño-Onion fries! Always delicious vegetarian food.

Ingredients:
1 can garbanzo beans
2 Tbs celery
2 Tbs onion
2 cloves of garlic
1 Tbs of nutritional yeast
1 Tbs dill relish, 1 Tbs of juice
juice from half a lemon
3 Tbs of Vegenaise
1/4 tsp salt
Begin by mincing celery, onion, and garlic. Into a bowl, combine first 4 ingredients and mash together.

Next, add rest of ingredients and mix together. Top with green onions if desired. Serves 2.

This was one of my all time favorite dinners. There is so many vegan/vegetarian options in Middle Eastern food. And they are ALL delicious and so easy to make.
sushi dinner
The post that is the most searched on my blog is the sushi wrapped in mamenori post. So I am happy to say that I ordered mamenori, soybean wrap paper, and made the sushi tonight with the mamenori. I ordered the spinach green mamenori from Gourmet Sleuth, I am very pleased with the fast shipping and the product is fantastic.
I also found soy wraps via Amazon, you can see them here: Kosher Soy Wrappers. Now, on to the goodies! This evening, we made veggie sushi, miso soup and edamame salad.

Saturday night we had a small UFC party. Here is the table with a few appetizers. Hummus and chips, apples and crackers, grapes, and various nuts.

Yesterday, I was in the mood for veggie sushi. I made one of my favorites: an avocado, basil, scallions, and tofutti cream cheese roll. I made the first roll with nori and the leftover veggies I made into a healthy lettuce roll.
