Delicious Buckwheat Blueberry Pancakes
1 cup of buckwheat flour mix (bob’s red mill)
3/4 cup of water
tablespoon of oil
blueberries

zucchini bread
This was so delicious. I used a recipe from Enlightened Cooking, a new cooking site I found when searching for a bread recipe. We have an abundance of zucchini and squash from both our parents so, why not make bread out of it! It was sweet and hearty and full of wonderful whole grains. I used half whole wheat and half unbleached all purpose flour, and yellow squash.

This is what I have been eating for breakfast. It’s so perfect for summer, light and healthy. Silk live yogurt, blueberries, strawberries and vanilla almond granola.

My first watermelon of the summer…sweet & juicy and delicious.

vegan blueberry muffins
Delicious, nothing like homemade muffins. I used a vegetarian times recipe:
- 1/4 cup margarine (soy or regular)
- 1/2 cup unsweetened applesauce
- 1/2 teaspoon salt
- 1 cup sugar
- 2 cups flour
- 1 tablespoon baking powder
- 1 teaspoon vanilla
- 1/2 cup soymilk
- 2 cups fresh blueberries
I used whole wheat flour and only used 1/2 cup of natural sugar, but my applesauce was slightly sweetened. Next time I bake muffins again I will probably use less blueberries. These were delicious drizzled with honey.
