Grilled veggies and chickpea & artichoke couscous

This was a great summer dish.  The grilled veggie kabobs are very quick and easy to make.  Grilled veggies are delicious in the summer.  The couscous dish was so very simple to make also.  I made the couscous and set aside.  Then, warm olive oil and rosemary and add the chickpeas and artichokes, mix together with couscous.  So easy and delicious!

This bowl full of goodness was so very light….what a great summer dish.  I barely boiled the zucchini and broccoli and couscous.  Then added garbanzo beans, parsley, lemon and braggs.

summer veggies

Just a simple brown rice & veggies {asparagus, squash, shitake, carrots, broccoli, cherry tomatoes, onion, garlic, water chestnuts} stirfry.  I think it’s the best way to use up the extra vegetables you have in your fridge.  I feel so blessed and thankful this summer with veggies from both of our parents.  I can’t wait until one day I have my own personal veggie garden.
