Last night we had delicious vegan enchiladas.  I made fresh guacamole for the first time this spring, so good!  Enchiladas were made with refried beans & soy protein, tofutti cream cheese, red pepper and topped with veg cheddar cheese, diced tomatoes, scallions, guacamole and tofutti sour cream.

I made 4, you know what that means….leftovers

I love veggie tacos!  These tacos are stuffed with tomatoes, lettuce, tofutti sour cream veggie cheese and peppers.

Round 2 taco salad was last night!  Oh so delicious.  Same ingredients pretty much

I found these great taco shells for making taco salads at the store yesterday.  I was pretty excited to make a taco salad for dinner!  The taco shell comes flat and round in the package, all you have to do is form it around a taco salad shape and place in the oven for a few minutes until golden & deliciously cripsy!

I first began by layering with refried beans on the bottom, then broccoli and rice.

Next, I layered with yummy pinto beans and morningstar veggie crumbles.

And finally, I topped with fresh lettuce, veg cheddar cheese, green onion and taco sauce.  I can’t begin to tell you how delicious this was…it was great!  Tonight was taco salad round 2, so I will have another delicious posting tomorrow.
