middle eastern apps
The other day we had some delicious vegan apps at Mirage, a middle eastern eatery. I had toomya (a potato salad type dish), foul mudamas (fava beans, garlic and evoo) and delicious hummus.

Well, it’s May 1st already. I am looking forward to light and fresh ingredients. Food doesn’t have to be so difficult. Sometimes only simple ingredients are needed. I love middle eastern style food. The ingredients are fresh and simple. Hummus above made with organic garbanzo beans, tahini sauce, olive oil, garlic, lemon and parsley.

Garlic naan bread, broccoli sauteéd in lemon, gimme lean faux beef style meatballs, potatoes mixed with olive oil, lemon, garlic and fresh parsley.

couscous
This is one of my favorite dinners to make. Falafel with a tahini sauce, hummus, and couscous, there is also soy protein on the side.

hummus plate
This was my lunch for yesterday. Raw pieces of zucchini and cucumber, stoneground wheat crackers, hummus and a middle-eastern style potato salad. I used a couple of baked potatoes that I baked the day before, so it was easy to put together for lunch.
mid-east style potato salad:
- 2 baked potatoes, diced
- tbs of olive oil
- juice from half a lemon
- 1-2 cloves of garlic
- chopped fresh parsley
- spices: salt, pepper, I also added coriander & cumin

Thursday’s dinner: a middle eastern flair
Falafel and Tzatziki sauce, flatbread, hummus, and boca vegan faux meat (sautéed with mid east herbs) w/ a vegetarian gravy sauce
hummus on the left, Tzatziki sauce in the middle, and veggie brown gravy on the right
This was one of my all time favorite dinners. There is so many vegan/vegetarian options in Middle Eastern food. And they are ALL delicious and so easy to make.
