Saturday was elijah’s birthday…
May 10th, my sweet boy had his 5th birthday. He had such an exciting day playing in the field with our friends and other doggies. I made him a special birthday cake, which he absolutely LOVED. It was so very simple to make. (recipe found online, below) The really cute dog bone cake pan came from Amazon here: Dog Bone Cake Pan
Peanut Butter Doggie cake:
- 1 cup whole wheat flour
- 1 tsp baking soda
- 1/4 cup peanut butter
- 1/4 cup sunflower oil (or veggie)
- 1 tsp. vanilla
- 1/3 cup honey
- 1 egg
Mix together flour and baking soda. Add remaining ingredients. Pour into greased cake pan and bake at 350° for 30 minutes. Let cool. I iced the cake with yogurt, but you could also use cottage cheese & peanut butter.

appetizers
Saturday night we had a small UFC party. Here is the table with a few appetizers. Hummus and chips, apples and crackers, grapes, and various nuts.

fiesta! dinner party
Over the weekend we had a dinner party with 8 of our friends. There were 4-5 vegetarians, including me & Ben…so it was fun to cook for everyone! All the meat-eaters loved all the food, success!
Our friend, Kelly brought the tofutti sour cream dips on the right. Cassie brought a whole dish of delicious enchiladas that everyone LOVED, they were filled with black beans, spanish rice, a mix of tofutti sour cream and cream cheese. You can see her post about the dinner party here. Friends also brought corn salsa dip and other goodies!
I had lettuce and tortillas for wraps of 3 different type of fillings; morningstar crumbles and faux chicken, and pinto beans.

chili party!
Over the weekend we had a Chili/UFC…and a little Rock Band party. My grandmother gave me a crockpot for Christmas, so I thought I would try it out with the chili. I believe I started the crockpot around 1pm and it worked perfectly, ready for the party at 8pm. I will say the chili did taste differently to me. Maybe it was because I made such a huge batch? I also made my hummus dip with apples and stone ground crackers.
