I love mellow mushrooms tempeh sandwich, so I try to replicated it when I can. Tempeh, peppers, onions, mushrooms, tomatoes, spinach & veganaise on a toasty wheat bun.

I have been putting all the garden veggies to use, just too exhausted and busy to take some pretty photos of my dishes. All of the veggies below are from the garden, sweet!
My lunch yesterday:
cold orzo salad with cucumbers, tomatoes, onion, garlic, olive oil, basil, s + p

My lunch today:
raw veggie sandwich: cucumber, zucchini, squash, basil pesto veganaise

- I only ate half, their portion sizes are so large, that is 3 large stacks of tofu and the fries take up half the plate! I don’t understand why american portion sizes are so big. Ben & I usually share our entrees when we eat out. It’s no secret that portion sizes have been supersized & american-ized, especially in the last 20 years. Just because it’s on the plate, doesn’t mean you have to eat it all. Share with someone or take half home to eat later

Today’s lunch was a tofurky sandwich with a side of roasted red pepper hummus, carrots & pita chips

Dinner was a veggie [cauliflower, cabbage, shredded carrot, garlic, portobello] burrito in a whole wheat tortilla, very hearty & delicious!

This past weekend was my birthday, so we headed to Asheville to spend a couple days. We stopped in for coffee at World Coffee in downtown Asheville and checked out a few shops.
Then, even though we were barely hungry, we ate at the Laughing Seed Cafe, a vegetarian restaurant in downtown Asheville.
We shared the pakoras appetizer. They are filled with sweet potato and zucchini and dipped into chickpea flour and fried.
We also shared the ‘mercury not rising’ sandwich, which is a battered seitan fillet that reminds me of a “fish sandwich”. And a side of their Jalapeño-Onion fries! Always delicious vegetarian food.
