macaroni peas & seitan

I love this yummy comfort snack. I boil the macaroni noodles and add the frozen peas in during the last 5 minutes of boiling.  I then add about a tablespoon of earth balance, tofutti cream cheese, and a mix of different cheeses.  This one had swiss and cheddar cheeses.  I add enough soy milk to make it very creamy and add seasonings such as, s+p, garlic, flaxseed, and turmeric. I like to add a dash of bragg’s near the end too.

Today’s afternoon snack:

tofurky, soy cheese & spinach roll up, walnuts, mixed veggies (broccoli, carrot, green pepper), wheat thins, natural chips and tofutti sour cream dip

afternoon snack

I don’t know about you, but I love afternoon snacks. When 3pm rolls around, I tend to get snacky. My snacks range from granola bars, coffee, fruit, pb scoop, to 1/2 sammiches.

The snack below is pretty typical for me:

Tofurky and soy cheese roll ups, mixed raw veggies like carrots, cucumbers, green pepper (all from our garden) and cauliflower.

at the inn

We love to stay at the Inn on Biltmore when we visit Asheville.  Saturday afternoon we watched the sunset on the veranda.

zucchini bread

This was so delicious.  I used a recipe from Enlightened Cooking, a new cooking site I found when searching for a bread recipe.  We have an abundance of zucchini and squash from both our parents so, why not make bread out of it!  It was sweet and hearty and full of wonderful whole grains.  I used half whole wheat and half unbleached all purpose flour, and yellow squash.

chickpea salad

also a vegan’s faux “tuna” salad

Ingredients:

1 can garbanzo beans
2 Tbs celery
2 Tbs onion
2 cloves of garlic
1 Tbs of nutritional yeast
1 Tbs dill relish, 1 Tbs of juice
juice from half a lemon
3 Tbs of Vegenaise
1/4 tsp salt

Begin by mincing celery, onion, and garlic.  Into a bowl, combine first 4 ingredients and mash together.

Next, add rest of ingredients and mix together.  Top with green onions if desired.  Serves 2.
