vegetable soup

I have been sick all week with a sinus infection, so I was thankful to have made a batch of vegetable soup last week.  Another nice thing was all the veggies came fresh from the garden.  I just chopped them up and added to the crockpot, along with a can of kidney beans, 4 cups of veggie stock, 2 cups of water, large can of tomato sauce, and the usual seasonings [4 cloves of garlic, bay leaves, italian herbs, S+P].

veggie stew

I’m trying to catch up, I’ve had a lot of pics to edit lately.  Last week, it was pretty chilly outside.  So, I made a veggie stew in the crockpot.  We still have leftovers a week later :)

This was made with a bag of frozen veggies: pearl onions, celery, carrot, and potatoes.  I added a can of pinto & kidney beans, a can of tomato sauce, veggie stock, morningstar crumbles for even more protein, and lots of yummy spices.

potato soup

I have been sick this week with a cold :(   I’ve pretty much been eating soups.  I made a tofu noodle soup and the potato soup below.  No pretty picture, just a pic of the soup in the pot!  It was delicious!

vegetable soup

I have been pretty busy this month with work and planning a big 1920’s style holiday party.  I hope to post some great pics of delicious food next week from the party!  I’m behind on my daily posts and I hope to make more time to post pics.

When I know I’m going to be very busy I love making dishes that will feed us for a few meals.  Stir-fry is great, lasagna and crockpot soups.

Last week, I made a big pot of fresh veggie tomato based soup.  We still have plenty left after a week and I even gave some to a friend.

cabbage soup

The other day, I made cabbage soup in my crockpot.  It turned out delicious.  I had quite a few fresh veggies like green beans, carrots and potatoes that I also added, along with a can of cannellini beans.

Cabbage is a great way to detox your body and add some roughage to your diet.  This soup is fresh, full of vitamins, and is very good for you.

First I washed and cut the veggies.  I used 2 carrots, 1 tomato, about a cup of green beans, 1 or 2 potatoes and 1 small head of cabbage.  I filled the crockpot with water and added a bay leaf and 2-3 small veggie seasoning cubes.  Cook on high for 6 hours, stir every so often.  Near the end I added a can of white beans and adjusted the seasonings.  I also added pepper, salt, cayenne pepper and red pepper flakes & banana pepper slices (I wanted it spicy).

Plain & simple, it’s good for you!

veggie stew


tomato & okra stew

It’s a little early for stew, but it has been cooling down a bit and I wanted to use the fresh veggies in something a little more hearty.  This was seriously delicious.  I had fresh okra, green beans & tomatoes.  I first thought about using them in an indian recipe, so this is a variation of Bhindi Subji.

I sautéed onion and garlic and added the sliced okra & green beans (seasoned with salt & pepper), cook for several minutes.  Next, I added diced tomatoes (from about 4 tomatoes) and vegetable stock, sauté for several minutes.  I added diced potatoes, cooked macaroni noodles, and seasoned with tumeric, coriander, cayenne, and basil.  Cook for several minutes to let all the flavors blend together.  Perfect for a rainy summer day like this one!

sushi dinner

The post that is the most searched on my blog is the sushi wrapped in mamenori post. So I am happy to say that I ordered mamenori, soybean wrap paper, and made the sushi tonight with the mamenori. I ordered the spinach green mamenori from Gourmet Sleuth, I am very pleased with the fast shipping and the product is fantastic.

I also found soy wraps via Amazon, you can see them here: Kosher Soy Wrappers.  Now, on to the goodies! This evening, we made veggie sushi, miso soup and edamame salad.
