sunday
Sunday was my birthday, and we headed to the slopes at Cataloochee with friends to snowboard. Waking up to snow was incredible, I love love love snow. We had lunch in the lodge, a veggie burger and fries, sorry no pic!

anniversary
Sunday, Aug. 31st was our sixth year anniversary! We spent most of weekend hiking and in the mountains.

On our anniversary we drove up to Cades Cove in the Great Smoky Mountains:

We spend the evening with friends at the Sunsphere and watching the fireworks on top of a roof downtown at another loft. What a great weekend!

mini-vacation
I have been on a mini-vacation this week, so sorry I have not updated. We have been house-sitting and I brought my camera, of course, but forgot my camera cord (however I just found one). So, I will have to make some time to upload lots of photos and write up some blog posts.
It’s nice to get away from the city and loft-living and enjoy a yard, trees, a front porch, a garden and nature! And just room to BREATHE

new veg blog alert!
My friend, Cassie, has recently gone vegan, Yeah! I finally have a good friend who loves to cook as much as I do, so I mentioned to her that she should start a food blog…and she did, so go visit her blog, Eating Veg. I can’t wait to try out a lot of her recipes, they look so delicious!

our camping weekend – lots of pics!
Here are a few pics from our camping weekend at Elkmont, in the Smoky Mnts, TN.
for breakfast, i heated up our whole wheat sweet potato pancakes, we also had instant oatmeal (not pictured) and hot chocolate. our friends made egg bagels.
lunch was veggie dogs and vegetarian baked beans
our friend, Jeana, brought these cute bottles of Happy Camper Merlot. for dinner, we had fire-roasted veggies, very filling. i had prepared all the veggies the day we left for the trip, so it was a very easy dinner! i added lemon juice, soy sauce, and fresh basil leaves.
Oh, dessert was delicious, but I don’t have a picture. We made banana boats! A sliced banana with chocolate chips and crushed graham crackers, warmed over the fire. The weekend went great, camping was so much fun. I have so many other camping food ideas, so I hope to go back again soon.
