Last night, I made another batch of delicious zucchini muffins. I made several mini muffins and a few larger muffins with added choco chips. I froze half of the batch. The super healthy recipe I have used for the last few times is here: Whole wheat & flax zucchini bread

I used these beans to make a very hearty soup and even made vegan cornbread.
This dish was one of my favorites in the last couple of weeks. Very simple & easy. Beans (I used large butter beans), morningstar crumbles, sliced white onion and handfuls of fresh spinach. Delicious especially with the garlic bread!
This was so delicious. I used a recipe from Enlightened Cooking, a new cooking site I found when searching for a bread recipe. We have an abundance of zucchini and squash from both our parents so, why not make bread out of it! It was sweet and hearty and full of wonderful whole grains. I used half whole wheat and half unbleached all purpose flour, and yellow squash.
